We don't blend early and late harvest leaves. Only the first-flush spring harvest — the youngest leaves with the highest L-theanine and the most vivid colour.
Stone-milled slow
Granite millstones at low temperature. This is slower and more expensive than commercial grinding but doesn't oxidise the powder or destroy the active compounds.
Nitrogen-flushed tins
Matcha oxidises in contact with air. Our tins are sealed with nitrogen to preserve freshness from the mill to your shelf.
