Matcha may arrive in your kitchen as a fine green powder, but it does not begin that way.
Before matcha is whisked into a bowl or poured into a latte, it goes through a carefully controlled agricultural and processing journey. Understanding that journey helps explain why authentic Japanese matcha is different from ordinary green tea.
The most important thing to understand is simple: matcha is made before it is milled.
The powder is the final stage of a much longer process.
Matcha begins with the tea plant
Matcha comes from Camellia sinensis, the same plant used to produce many other types of tea.
What differentiates matcha is not simply that the leaves are eventually powdered. The cultivation and processing methods matter too.
Tea intended for tencha—the leaf material used to produce matcha—is cultivated using shading practices before harvest. Japanese agricultural guidance describes tencha as tea grown under shading, then steamed and dried without the rolling step used for many other Japanese teas.
Shading changes the environment in which the tea plant grows and influences compounds associated with flavour and composition, including chlorophyll, caffeine and L-theanine.
From fresh leaf to tencha
After harvesting, the leaves undergo processing.
For tencha, the leaves are steamed and dried without being rolled. Stems and leaf veins are subsequently removed.
The resulting material is called tencha.
This is a crucial distinction.
Tencha is not simply ordinary green tea that has been placed into a blender. It is a specific processed tea leaf material intended to be transformed into matcha.
Then comes milling
Once suitable tencha has been produced, it can be ground into an exceptionally fine powder.
Traditional Japanese matcha production uses stone milling. Japan’s Ministry of Agriculture, Forestry and Fisheries describes matcha as tencha ground into a fine powder using a stone mill.
The result is the vivid powder that most people recognise as matcha.
Because matcha is consumed as a suspension of the finely ground tea rather than simply drinking water that has been infused with leaves, the experience is different from ordinary steeped green tea.
Why the process matters
Every stage influences the final product.
Cultivation influences the leaf. Shading influences the plant’s composition. Processing determines the characteristics of the tencha. Milling determines the final powder. Storage and handling then influence freshness.
So when evaluating matcha, looking only at the colour of the powder isn’t enough.
A deeper question is: what happened before the powder reached the tin?
Matcha is an agricultural product

Matcha isn’t manufactured from an anonymous green ingredient. It begins as a tea plant grown by agricultural producers.
That means region, cultivar, season, cultivation practices and processing can all contribute to differences between teas.
